About Jacksons’ Farm is located in the bountiful Blackland Prairie of Central Texas, approximately 10 miles east of Austin, near Manor, Texas. Originally established in 1996, we are stocking our farm with Australian Lowline Angus cattle. We have been breeding and raising Lowline Angus since 2005, and we pride ourselves on being amongst the first Lowline Angus breeders here in Texas. We are developing our herd to provide breeding seed stock and natural hand-raised beef to a discerning market that demands quality meat that is free from hormones, antibiotics and chemical additives. We do use preventative vaccinations for our calves at 30 to 60 days of age. We strive to operate our farm based on organic principles. Although we have not achieved organic certification for the farm, our pasture has not seen the use of herbicides or commercial fertilizers for over 10 years.

This farm is family owned and operated, and all of our stock is registered. Our cattle are primarily fullblood Lowline Angus and Miniature Hereford. The cross between the two breeds produces an outstanding quality-cut of Black Angus beef with just the right marbling influenced by the Hereford breed. We strive to produce a black calf with a white face, known as a “Black Baldie.” We have learned that an important part of producing tender meat is to start with a breed like the Australian Lowline Angus that is bred for efficient feed conversion and high ratio of meat production relative to carcass size. Then we cross with the Hereford breed that is known for its excellent maternal traits and marbling influence; thus, producing an exceptional cut of beef. Lowline cattle also have 30% larger Rib eye area per hundred weight, which has shown an increase in boneless retail yield of 25 – 30 %. The cuts are smaller but flavor is excellent! They marble higher than other breeds tested in Australia.

| The idea carcass size of Lowline Angus crossbreds contributes to our marketability of a locker beef business, due to the smaller, more convenient carcass size to accommodate economical use of home freezer space. We use an USDA inspected slaughter house in Johnson City, Texas, and all of our beef is USDA inspected, with “actual weight” displayed on the “see-through” vacuum-sealed package. No guessing of “mystery” meat here – you actually see what you are getting! |
